Pizza Quesadilla Recipe

Here's a super quick way to eat Pizza, without actually making pizza. It's fast, and easy, and tastes just like a thin crust pizza. Just add pizza sauce, cheese, and your favorite toppings. 

The after pic just doesn't do this justice, but trust me it's GOOD.

Lemon Onion Brick Chicken ~ & I am guest posting at HOH,,, hehe~

Is it just me, or does summer make you crave bbq like nothing else. I just love grilling, and I am the one handling the grill at my house. I am kind of a control freak, and the kitchen, cooking, is totally my territory, and unless you are there to clean up, please stay out, lol. 

A couple weeks ago, we had ourselves a delicious bbq, man it was good. I've posted about my BRICK CHICKEN before, but this time I went a step further, and added onions, and lemons to the chicken, along with some spices. You can use whatever you like, as far as spices are concerned. You know in this house, everything has a kick to it, we just love spicy food.
This is how I spiced up my chicken. I will just say sprinkle the bird with all the following spices. Adding more, or less, of anything you choose. Thats my regular rule of thumb when seasoning anything, sprinkle the surface evenly, adding another layer if you choose to. Does anyone else season like this. I hate using measuring spoons, everything is done by feel, hand, and eye. 

LEMON ONION BRICK CHICKEN
*salt
*pepper
*garlic
*garam masala
*cumin
*red chili
*dry mustard
*lemon pepper
*olive oil
*lemons
*onions

You can even make a paste with the above ingredients, and then spread it on the chicken. Or just sprinkle it all over like I did. Make sure to get in all the crevices, and under the skin, even poke some holes in the thinker parts of the chicken, and rub the seasoning in there really good. 

Then with a burning hot grill ready for you, place your bird cavity side down, lay all the lemons and onions on top, and place your brick on it. Cook, then flip, repeating the process until the meat literally falls of the bones, and my friends, if you can resist to wait until it's placed on the table good for you. For the rest of us, burn your fingers every 5 seconds trying to pry little pieces off, hehe. Oh and don't forget about the kiddos, and the hubby who are all swarming around waiting for mama bird to drop a little piece in their mouth too, lol. 
I love grilled vegetables, and this particular day, I choose to grill some zucchini. This is so easy, all you do is slice the zucchini length wise, and sprinkle with olive oil, salt and pepper. Thats it!!
So there you have it folks, I paired this with some rice, rajma (indian spiced beans), and a tomato and onion salad. Boy oh boy was it good eats. Sorry, clearly nobody was thinking about taking pictures of the plate, we were all digging in immediately after these pics were taken, lol.

Uttapum, and egg curry

The other day I wanted to make an egg curry, but realized I was out of atta flour, the stone ground wheat flour used to make chappati. So I made some uttapum instead, and it was pretty good. I love eating my egg curry with chappati, but this was a close runner up for sure. 

Uttapum is a south Indian dish, similar to a dosa. It is made from urad dal, and rice, left to ferment, and then cooked thick like a pancake with tomatoes, onions, or other veggies right in the batter. Remember the other day I showed you a wonderful Korean type pancake, the KIMCHI PANJEON, well this is a sounth Indian type pancake, similar in that you cook veggies right into the pancake. 

I have never soaked my own dal or rice before to make either dosa, uttapum, or idli, rather just use a mix, or already ground flour. This mix is really easy to make, you just add water, and I added some curd (yogurt) into it as well. 

Then I diced up some onions and green chillies, really finely, and sprinkled some salt and red chilli on them. You need a little olive oil or ghee to add to the hot tava or pan, and thats it folks. 
 The uttapum turned out super soft in the middle, much like an idli, and the outside was just the slightest bit crispy. I used very little ghee. Had I used more, they obviously would have even tastier, and crispier.
 This is what the batter looks like when mixed. 
 After spreading out the uttapum, immediately add the onions and chillies to the batter before it sets. 
 The onions and chillies, finely chopped.
 This is the mix I used.



This is the egg curry I made. I will post the recipe for this soon. I love adding extra veggies in it such as spinach int his case. Adding spinach to almost any food, is a wonderful way to incorporate a healthy veggie, without changing the flavor of the food. Getting kids to go near it, that's the tricky part though.

Korean Kimchi Pancakes-Kimchi Pajeon

Kimchi PA Jeon - Kimchi Pancakes with scallions

Today I want to share a recipe using some delicious, and super healthy Korean kimchi. By using it in these pancakes the flavor will not be so strong, and you might enjoy trying this amazing food. It's much easier than just taking a bite straight out of the jar, especially if you are not used to it. 

Kimchi is typically made super-spicy, and it is eaten by almost all Koreans, with almost every meal. The average Korean consumes about 40 pounds of this each year. It is basically a fermented cabbage, made with garlic, salt, vinegar, chiles, and other spices. Sometimes kimchi is made using things like radishes too. Kimchi is high in vitamins A, B, and C, and has loads of that good bacteria found in yogurt, lactobacilli. This is especially helpful in digestion, helping to prevent yeast infections, and possibly helpful in the prevention of cancer.

Clearly this stuff is god for you, but the key to all food that is super healthy, is to actually eat it. Growing up Romanian, I am used to eating sour condiments with my meals, so this is not to far from that. Since I started cooking Indian food, eating spicy lime pickle for example is very common in our house as well. So when I tried kimchi I enjoyed it from the very start. However like I said if you are not used to this kind of flavor, I suggest starting of with a mild kimchi, and trying this recipe. You will not believe how tasty having cabbage in your pancakes can be. I promise you will love it!!

Kimchi Pajeon

* 3 c all purpose flour
* 1/4 c rice flour
* 1/2 c urad flour
* 1/2 c milk
* 2 eggs
* 1/2 tsp baking powder
* 1/2 tsp chili powder
* 1 tsp sugar
* 1 tsp salt
* kimchi juice (maybe 1-2 tsp from the jar, as needed)
* 1 c chopped kimchi
* 1 bunch green onions, cut in 1 inch pieces

1. Mix all dry ingredients together. Then add the wet ingredients, and mix until you get a smooth batter. A little thicker than a crepe batter. Once your batter is mixed well, see if you need extra liquid. Use some kimchi juice from the bottle, and if you still need more add a tsp of water at a time.

2. Now you can add your green onions, and kimchi to the batter.

3. Have a hot skillet oiled slightly, and pour the batter forming a pancake. Make sure to help spread the batter, green onions and kimchi smooth, and as thin as possible.

4. Cook until browned on one side, then flip to cook the other side.

5. Serve hot, or you can enjoy these cold. 

*** Please note***
If you do not have all the different kinds of flours available, you can make this using just regular all purpose flour. Just adjust the measurements accordingly. Using the different kinds of flour is not a typical recipe you will find if you google this. I just added those because well, that's how I cook. I wanted to see how it turned out, and I loved it, so I'm sharing it with you as well. 

In addition, if you can get to a Korean supermarket, grab a bag of KOREAN PANCAKE MIX. This is suppose to give you a nice crispy pancake, and I want to try this out next time. I didn't have this on hand, but after asking several Korean friends, they all suggested this mix to me. 




Hope you can try this wonderful treat yourself. It's super for breakfast, lunch dinner, or just to snack on anytime of the day. It's also a perfect appetizer for a party. Remember you can add shrimp, carrots, red onions, even broccoli. Just experiment and see what you come up with. However I LOVE the kimchi in there, and adding some extra heat, was just perfect for my taste.

EASIEST Rotisserie Chicken Curry Ever ~~ GIVEAWAY ~~

This is seriously the EASIEST chicken curry recipe, and I assure you than ANYBODY can make it.


Last week I bought two rotisserie chickens from Costco. I knew I wanted to eat some for dinner than night, make some chicken salad, and make some chicken curry with it. Mission accomplished, and it turned out so good, might I add.

Here's how I made the most delicious, and super easy chicken curry ever. Are you ready?


Ingredients
* One Rotisserie chicken, all the meat
* One pack of SHAN chicken curry mix
* Small container of mushrooms
* Extra large onion, or two small ones
* 2 tsp oil for frying onions
* 2 tbls ginger garlic paste
* 2 cups plain fat free yogurt
* 1/2 large diced green pepper
* one large diced tomato
* cilantro for garnishment
* salt to taste
* 2-3 cups water (depending on how much gravy you want)

1. Take your chicken, and remove all meat from the bird. I removed all skin too, so just the meat. Rip it up in bite sized pieces, but larger is better. The chicken is already cooked, and if you cut it too small, it will shred further in your curry, leaving you with shredded chicken curry.

2. Slice the onions and add them to a hot pan with a little oil. Saute the onions until slightly brown.

3. Add ginger garlic paste, and a little salt, continue to saute to remove the bitterness from the ginger garlic.

4. Add the mushrooms and saute until juices run, and mushrooms are also browned just a little.

5. Add the chicken, yogurt, and chicken curry mix, stir, and let simmer for a minute or two.
WARNING, if you can't handle spicy food, start off with much less of the mix, and you can always add more. Adding the whole box gives an incredible flavor, especially when using a WHOLE chicken, I thought it was perfect, but it was a bit spicy. We of course love spicy, so you may want to use less, and add more, if needed.

6. At this point, since the chicken won't let of any juice itself (it's already cooked), you need to add some water, so you have a nice gravy. Make it as thin as you want, or leave it thicker.

7. Add the diced green peppers, and tomatoes, and let it simmer, with the lid on, med flame, for about 15 minutes, or until the tomatoes, and peppers soften a bit.

8. Garnish with cilantro, serve over rice, or with a chappati, or fresh naan!


This was the first time I made a curry using a store bought mix, and I must tell you, gosh it was easy, and the taste was incredible. Even my kids ate the heck out of it, and that was the best part. The chicken is so moist, because you are using rotisserie chicken. The mix is perfectly seasoned, I didn't add a single thing, other than a bit of salt at the beginning, and don't even think I needed that.

I did add extra yogurt to my curry, but I love the flavor of yogurt, so you can add less if you'd prefer. Also the extra ingredients were added because I had it in the fridge, and I always try to add extra veggies to my curry dishes. Some spinach would have also been delicious in here.

I served this meal with naan that I also bought from Costco, but if you don't have naan, serve it over some rice, or even a tortilla, if you don't know how to make chappati.

I added a link where you can get a box of SHAN Chicken Curry mix, but I must tell you, if you have an Indian grocer near you, go there, and get it. I can't wait to do a post on some of my Indian grocery stores, it will be so fun to walk you through, and show you the goodies there.
