Cinco De Mayo ~ FISH TACOS ~

Happy Cinco De Mayo!!
For lunch today I decided to make something really yummy.
Cinco De Mayo sounds like a good reason to have some Mexican food, right? For breakfast I had egg and cheese tacos, and didn't even remember it was the 5th today, lol. Wrap anything in a tortilla and you your meal is perfectly packages and ready to devour. Today, I had some fish that was begging to go in there. 


MAHI MAHI BLACK BEAN CORN TACOS
w/ fresh salsa 


You want to make this? It's SO easy!


-Mahi Mahi fish (or any other kind of fish you prefer)
-Refried beans (fat free kind, or 99%anyway, ha ha)
-La Tortilla corn tortillas (they are so good, and don't tear)
-Shredded Lettuce (Romaine)
- Fresh Salsa
-Lemon
 Oh mama, can you taste this? I LOVE fresh salsa!!!!
 My beautiful Mahi Mahi, getting all juicy, and yummy. I already took a small nibble, can you see it, he he. I simply seasoned the fish with a blackened seasoning rub, some extra salt, lemon pepper, and then squeezed fresh lemon juice at the end.
 My favorite corn tortillas!! They are seriously the softest, chewiest, hearty corn tortilla ever, and for those who don't like corn tortillas, this is perfect, it doesn't have the strong CORN flavor or smell.
 I so couldn't resist eating more fish. Oh mama, it was so good.
 Grill those tortillas people, on a open flame if you can. Get it nice and charred, oh yeah, that's good.
 Spread some beans, add some fish, and try not to eat more than two tacos, lol.
I actually didn't even try to stop at two, even though I should have. I just had to have THREE, what can I say.

And since there was nobody to celebrate with, and it was noon, and Dino was looking at me, and I'm trying to lose weight, AND most importantly I didn't have one.......
I couldn't have a beer, and had some cran-pomegranate juice instead. Oh well, I'd say it was a perfect meal regardless.

Spinach Tortilla Beef Burrito

Spinach Tortilla Beef Burrito



I love Mexican food, almost as much as I love Indian, and Romanian food. Burritos, and tacos, are SO easy to make. I'm sure all of you have tried to make it at least once. 


This is one of my favorite ways to prepare it. 


- Brown some meat, and add your favorite taco seasoning. 
(I like to use turkey, lean beef, or even the boca crumbs sometimes)
- Heat the tortilla on your gas stove, or in a skillet if you don't have gas. The charred edges on a tortilla are so yummy though.
- Add some spanish rice.
- Refried beans
- Lettuce
- Fresh Salsa (recipe here)
- Shredded cheese ( I used cheddar)
- Guacamole if you have some, sure why not
- Extra lime juice, and a beer (ok that's optional, but oh so good)


Then my dears, you enjoy!!!
This is just so delicious, and I love the different tortilla flavors you can get. My favorite is the spinach, but feel free to use what you want, just make sure to put a flame to it, if possible.

How to make the BEST SALSA ever!!!

I am very serious guys. 
If you LOVE fresh salsa, or salsa fresca, this is for YOU.

It is basically like any regular salsa recipe, except for my SECRET ingredient, which now YOU all will know. So make sure you don't spread the word too much, OK. 




I only had these blue organic tortilla chips, but for pictures sake, it would have looked pretty with some regular chips as well, oh well. 
I have yet to master food photography, and it doesn't help that I don't have pretty little plates, and stuff. 

Ok, here is how I make my SALSA....

Tomatoes - say 6 romas
Onions - 1 medium
Chillies - 1 or 2 serrano (but you can use whatever kind you want)
Cilantro - half a bunch
Lemons - 2-3 depending on the juiciness
Salt

Ok, now dice everything up, tomatoes, and onions, pretty fine.

 Chillies, REALLY fine, and I add seeds, veins and all. I LOVE it spicy, and without a little heat, I think it's useless, jk :)

Cilantro,  chop it up baby, big, small, whatever, I use a lot, because I LOVE the flavor. Again without cilantro, it's just not salsa.

My SECRET ingredient, LEMON JUICE, and TONS of it. Smush the heck out of your lemon, roll it, squeeze it, microwave it, whatever it takes to get that juice flowing. Now squeeze that juice, pulp and all, in your salsa. Try not to squeeze any juice in your eyes. I add enough so that my salsa is literally half swimming in it. OK!!!

Now, add some salt, and take your hands, and smush everything together. Tossing with a spoon just isn't enough. I really work it people, so that even more juices get flowing, and THEN, lick your fingers, take a chip, scoop some up, and TRY to stop eating it. I dare you to STOP, and if your thirsty, well only BEER will do at this point. I'm serious. 

Stay tuned for some yummy chicken taco, burritos, salad, combo. 
Yes, cooked once, and you can make several meals, cool. 

Now here is a REALLY funny pic of a friend of mine. 
She went to work and thought her feet felt a bit weird. 
When she looked down, she noticed she was wearing 2 completely different shoes. I laughed so hard, and had to give you guys a chuckle too. It's just too funny. 

She says nobody has noticed yet, because she's locked herself in her office, and is hiding, BUT, I know someone will eventually notice, he he. Sorry girl, but I laugh even harder at the thought.
